If you are the more experienced cyclist in the relationship then get something that you can see will help them. Base it on what you've found to be solid kit and take into account their riding and experience. There's no point buying someone a full clipless pedal system if it's only gogint o make their life harder.
If your friend is the more experienced cyclist, then ask them for ideas. They will know the kit they like and what works for them. They'll know what's wearing out and what needs upgrading, so your best way to give them a happy Christmas morning is by getting them the bike thing that they need to buy themselves anyway.
Failing that, books and merino socks are always good.
If your friend happens to be this guy riding backwards the whole way down a mountain in Norway, then I have no idea what to suggest. Clearly cycling forward no longer holds the interest and challenge he needs!
